Ingredients

  • 300 g Sausage. A selection of your favorites.
  • 1 Leek.
  • Cabbage. Same amount as the leek.
  • 1-2 tablespoons Mustard
  • 1-2 tablespoons Japanese soya
  • 4-6 dl Water
  • 1-2 dl Beer. (Low level of bitterness)
  • Herbs: Marjoram, bay leaf, allspice (a fraction), fennel seed or any other of your favorites.
  • A pinch of sugar
  • Salt and pepper
  • Cornstarch. Optional

Quick, simple and delicious. The perfect outdoor dish. Inspired by the Swedish classic Nikkaloukta soup which is based on minced beef, cabbage and leek. However, in this simplified version I have replaced the beef with sausage and added some beer.

Chop sausages, cabbage and leek. Sear the sausages in the pot until nice color. Add the veggies and herbs. Submerge with water and beer.
Have a few sips of beer and relax for 10 min or until desired softness of the cabbage. Season with mustard, soya, sugar, salt and pepper. Bind with cornstarch to desired thickness....Enjoy.
