Ingredients

  • 3 tablespoons olive oil
  • 2 medium yellow onions
  • 1 large green bell pepper
  • 7 garlic cloves
  • 2 cans chopped tomatoes
  • 2 1/2 tablespoons sugar
  • 1 1/2 tablespoons kosher salt
  • 1 tablespoon paprika
  • 1 tablespoon ground cumin
  • 1 1/2 teaspoons freshly ground black pepper
  • 1/2 bunch Coriander
  • 1 block of feta cheese
  • 4 - 6 large eggs

Best meal ever! Works as breakfast, lunch and dinner and you can spice it up just how you want!

Heat the oil in a large pan, add the chopped onions and sauté over medium heat until translucent, around 5 to 10 minutes. 
Add the seeded and chopped bell peppers and the finely chopped garlic and cook just until softened, 3 to 5 minutes and slowly pour in the tomatoes.

At home I mix sugar, salt, paprika, cumin and pepper in a little jar. 
Add this and let the mixture simmer for a while. Until it tastes good! 
And then it's time to crack the eggs into the tomato mixture. 
Cover and simmer for approximately 10 minutes or until the whites of the eggs are no longer translucent. 

Sprinkle feta cheese and coriander on top and serve with a good sourdough bread!
